Dairy
The goal of Dairy Services is to ensure a safe and wholesome supply of milk and dairy products to Virginia consumers.
The Dairy Services food safety program administers five regulations specific to the dairy industry and which govern the production, processing, labeling, handling, and sale of milk and milk products in Virginia.
- Regulations Governing Grade "A" Milk, (2 VAC 5-490)
- Rules and Regulations
Governing the Cooling and/or Storage of Milk on Dairy Farms; the
Sampling and Sample Handling of Milk from the Farm to the Laboratory;
the Hauling, Transferring, Handling and Delivery of Milk from the Farm
to the Processing Plant, (2 VAC 5-500)
- Rules and Regulations Governing the Production,
Processing and Sale of Ice Cream, Frozen Desserts and Similar Products,
(2 VAC 5-510)
- Rules and Regulations Governing the Testing of Milk For
Milkfat, Protein and Lactose Content By Automated Instrument Methods,
(2 VAC 5-520)
- Rules and Regulations Governing the Production, Handling, and Processing of Milk for Manufacturing Purposes and Establishing Minimum Standards for Certain Dairy Products to be Used for Human Food; (2 VAC 5-530)
