Rules and Regulations Governing the Production, Handling, and Processing of Milk for Manufacturing Purposes and Establishing Minimum Standards for Certain Dairy Products to be Used for Human Food; (2 VAC 5-530)
Milk for manufacturing purposes is milk produced for use in cheese, butter, powdered milk, condensed milk, and evaporated milk. The regulation establishes a dairy farm inspection and milk sampling program similar to Grade "A", but with less stringent quality standards and is administered by the dairy processing plants receiving the manufactured grade milk. Dairy Services permits and inspects the dairy processing facilities and oversees the industry dairy farm inspection program.
In addition to the processing of cows' milk, there is a developing goat and sheep milk industry in Virginia. As of January 2004, there are eight goat dairies and one sheep dairy producing cheese for sale in Virginia.
